Full City Roast:


Distinguished by the deep brown color and heavy oil on the bean's surface, Full City Roast further intensifies the unique character of each different coffee. Coffee does not become bitter when roasted darker. Bitterness in coffee is from poor quality beans or improper roasting. Dark roasted coffee should have a heavy, rich flavor, never burnt or bitter.

The extended time in the roaster not only makes coffee darker, but also lighter in weight. When coffee is harvested and processed, it is dried to a specific moisture content. During roasting the water in the bean is lost. The water inside a coffee bean is turned into steam by the temperature of the roasting process. As this steam forms, it causes the coffee bean to swell in size.

At certain points during the roasting process you can hear the beans "crackle" this is the sound of them cracking open as the steam forces the ban to grow in size. "Crackling" is a very important indication a Roastmaster listens for and signals a particular point in the roasting process. After roasting, coffee will weight up to 25% less than when it was green, due to the lost weight of the water.

Roasting time for Full City Roast coffee: 11 to 12 minutes
